TRAVIS MCSHANE
CHEF/OWNER
Travis McShane, the Chef and Owner of Ostia, has been leading the restaurant for four years, bringing over 15 years of industry experience to his role. As the visionary behind Ostia’s concept and menu, he is dedicated to delivering farm-to-table cuisine with Mediterranean and Italian influences. Before founding Ostia, Travis served as Executive Chef at the acclaimed Barbuto in NYC’s West Village, working closely with renowned chef Jonathan Waxman. Outside of the kitchen, Travis is a proud father of two girls, an avid golfer, and enjoys traveling with his family.

EXECUTIVE CHEF
Ray Melendi is the Executive Chef at Ostia, where he has been a vital part of the team for the past four years. With 12 years of industry experience, Ray is responsible for building the daily menu and overseeing the kitchen’s daily operations. Before joining Ostia, he worked as a sous chef for Travis McShane at Jonathan Waxman’s restaurant in Nashville. After his time at Adele’s, Ray launched a successful popup wine bar, "Setsun," with Jason Zygmont. His deep culinary expertise and passion have made him an indispensable fixture at Ostia.

HOSPITALITY DIRECTOR
Vivi Ley is the Director of Hospitality at Ostia, where she has been a key leader for the past four years. With 15 years of experience in the industry, Vivi has an impressive background that includes being part of Stephen Starr's New Restaurant Lead team, managing Upland NYC, and serving as a production chef for Chef Marcela Valladolid and Chef Geoffrey Zakarian. She was also the Opening GM of Ostia, bringing her extensive expertise to create a warm and welcoming atmosphere. Outside of work, Vivi is a proud mother of two and enjoys traveling whenever she can.
