Ostia will be “New American” with Mediterranean and Italian undertones. To us that means a fun menu that is ever changing, eclectic, and honest. Made up of a la carte meats, pastas, seasonal salads, diverse sides, while focusing on the philosophies of farm to table, seasonality & simplicity. Our efforts will be focused on sourcing local and sustainable food while being a neighborhood restaurant.
Travis McShane is a Houston native, growing up in north Houston before attending The University of Texas & The Culinary Institute of America. In 2009, Travis was introduced to Jonathan Waxman, one of the godfathers of American Cuisine, who gave Travis his start. Travis worked his way up from extern, to line cook, to executive chef at New York City’s Barbuto & Adele's, Nashville. Travis became Jonathan Waxman's corporate chef overseeing culinary operations & menus for all of Waxman's restaurants in San Francisco, Nashville, Atlanta & NYC. In this role Travis was also able to travel the world with Waxman doing various charitable dinners and cooking festivals. In the summer 2018, Travis and his wife Charlotte moved back to Houston with one goal in mind. To open a neighborhood restaurant that embodies the food, atmosphere, and philosophies that most define him.
Ostia's culinary focus is on buying and sourcing the best local ingredients & letting them shine. In our eyes, food should be exciting yet approachable to everyone. Our menu is set up as an "a la carte" and is best enjoyed by eating in chef's favorite way, family style!
